I love brown rice, it is so much better for you than white and has a wonderful chew and nutty flavor. Make the switch, you won’t regret it! This side could complement many meals, the flavors are bright and are perfectly balanced. Make sure you use fresh herbs, dried will taste bitter. Serves 4.
1 cup brown rice
2 cups water
1/2 onion chopped
1/2 tsp salt
1/4 cup fresh parsley, minced
1 TBS fresh thyme, minced
Zest and juice of 1 small lemon
1/2 cup grated Parmesan
pepper
Bring water to boil, add rice, onion and salt. Reduce heat to low and cook until water is absorbed and rice is tender, about 40 minutes. Add herbs, lemon zest, juice and parmesan, fluff rice until combined, remove from heat and replace lid, let sit for 5 minutes. Fluff again and season to taste with pepper and salt if needed.
