Grilled Salmon Sandwiches

Difficulty: Moderate
Courtesy Barefoot Contessa: You can easily scale this recipe down, last night it was dinner and I made it for just the 2 of us.

Whitefish with Lemon Vinaigrette

Difficulty: Moderate
Due to the nature of the ingredients substitutions are easily made. I couldn’t find raddichio or I wasn’t willing to pay for it so I used red cabbage instead.

Skillet Lasagna

 Meatloaf mix is a combination of ground beef, pork, and veal, sold pre-packaged in many supermarkets. If it’s unavailable, use ground beef. Use a 12-inch nonstick skillet with a tight-fitting lid for this recipe.
